I’m sure there’s a way to change the default kbd shortcuts, but I can’t remember what it is, and I can’t find anything in the docs.

I want to change the default option-command E (for Presentation Mode) to command P (as I already have it on my other mac). How the heck do I do this?

Go to Mac system preferences>shortcut>Applications>type in exactly the command you want (as written in the menu) and set up your new shortcut

You will have to find the “Presentation” entry and change the “shortcut”. This file is rather fragile, so edit at your own risk.
