DIY Synth kits or Other projects

Every year I am part of an Arts and Science Camp for kids and adults. This year I am thinking of doing something using DIY synth kits or something else to introduce kids (and even)adults to electronic music making. Have any of you done something similar or know where I could find some info on how to go about this? It needs to be fairly inexpensive (or as close to it.)

DIY optical Theremin would probably do the trick

if you have access to a copy of nic collins handmade electronic music (http://www.nicolascollins.com/handmade.htm) 2nd edition, there is a host of easy circuitry around the 4093 ic.
instant noise with just a battery and one or two components.
