My favorite comes with the Max examples (in the sampling folder). It's a very interesting Max patch. After teaching many Max techniques, show students how they are applied in this patch (and ask them to modify / expand this patch...)

I second Jean on that. There's a lot of information in the examples folder that many people overlook. In the granular example, and many others, you can copy the bpatcher from the patch and work it into your own.
