I'm wondering if there is a good resource for detailed descriptions of objects. I'm having trouble understanding what is going on in sah~, for example. I find the help file to be too brief and vague.

That would be the reference page. Either click on "reference page" at the top right corner of the help patch or check its online counterpart. For example; here's the 

For a good overview go to the main Max help (control ? or Help -> Max Help) and check the menu to the right. The "Objects by function" or "Objects A-Z" are good starting points to find reference pages.

And you can always hit "control-shift-r" whenever you got an object selected.
