I am hoping someone here can shed some light on this subject.

I want to control pre recorded midi instrument information (pitch) from Pro-tools using Max. I have no experience with rewire and therefore was pointed in the direction of using soundflower by a colleague.

I know that the midi outputs from Pro-tools need to be set to soundflower, but from here on in I'm stumped... Any help on how to achive the disired output would be very appreciated.

I'm not entirely sure if this solves your problem. But heres a patch that will help you get MIDI data from Pro-tools into max. Set the output of your MIDI track to 'to MaxMSP-1'. When you playback the MIDI data, Max will receive it.
