I recently went from Snow Leopard to Lion and Max is doing something it has never done before. When I start the app, it opens all of the patches I had upon the last quit. I have a feeling this could be one of Lion’s “great” new features…

Don’t know if you found this in your googling, but not only can you turn this feature on and off globally in system preferences, there is also some command line technique for setting some plist flag to turn this feature on/off per applicaiton (I’m assuming the system prefernces option ignores this file and just turns it off for everything).

There is also a third party System Pref pane that gives some control per application.
