I would like to create a visual with jit.gl.gridshape that reacts based on the sound frequencies of my external synth (audio input). 

 and getting numbers but isn't really what I want to achieve, do you know how I can get number though snapshot based on frequencies? 

E.g.: let's say that when frequencies are low the color of a jit.gl.gridshape changes to x and when high to y

You need to capture frequency and not level.

Max has for example fzero~ that can do that.
