I think it's actually not that easy to find books to learn Max 7. Some you can recommend? Of whatever topic (music, visuals, etc.), tho a general one would be much appreciated.

Max 5/6 books will be easily transferable to Max 7.

In my experience Electronic Music and Sound Design Vol 1 is the most pedagogical approach to Max, provided that your main interest is in the MSP (Audio Signal Processing) part of Max.

I too would be interested in any materials about Jitter.

It's a shame that more computer graphics departments don't embrace Jitter. You can hardly get anything done in OpenGL in one term.
