What's the best way to send data from an Arduino to a Max patch without the USB cable ?

What kind of data? How big/fast?

I'm using SenseStage's MiniBee myself: http://www.sensestage.eu/?page_id=48 It's an arduino variant with Xbee. Comes with a software framework that takes the hard work out of setting up the wireless transmissions.
Might be overkill for you. Don't have much experience with other wireless arduino solutions. Others will surely have more tips.

      you also could use RFduino.

I had quite good results with this shield, although it would probably be more reliable with an extra antenna!
Don't know if the official arduino WiFi shield is better...
