I'm about to download the demo.
I'm looking at turning live audio into video, and a friend told me about Jitter and said it might do the trick. Apologies if this has been asked before, but where would you even begin looking? Is it a case of de-constructing the patches that come with it? Throwing a bunch of letters at the screen and watching what happens? I've only ever dealt with hardware and the tiniest code in AE.

basically you would have to look at most of the tutorials and get a good grasp on DSP. MAX comes with very comprehensive tutorials and the forums run pretty deep if you want to find the answer to something a bit more specific. What you are talking about is remapping data and that is something MAX is very good at.
you can always learn from other peoples patches and cobble things together from them but you will need to know what is going on inside too. Otherwise when things go wrong or you need to tweak you're boned. MAX takes a bit of time to get into but once you get its structure etc. its very rewarding and the possibilities are huge.

Max has some of the best (most detailed, helpful, clear, useful) tutorials I have ever seen, together with example patches.
You may want to read a bit of the theoretical stuff first to get an idea of what Max/MSP/Jitter is, what the differences are between the three components, and how they work.
From then on, it's trial and error - keep doing the tutorials, and if there's anything that can't be answered there, you can find (excellent) support in these forums :)
