I'd LOVE to create some borders around my text, for instance instead of using a rectangle background for light movie area (my text is white)

Well, don't know if you can set outlines with them but what you can do is have a black text in the background and have a slightly smaller white text in the front. This way you've got your outline (good old illustrator trick) One suggestion though; keep it readible, subtitles are meant to be as neutral and clear as possible.
