Hey, I was thinking of a dissertation idea and in my search I found this epic contraction. I have a few questions about it as I think it's inspired me to try something like a 'print-a-moog' or something similar as my own project.
my questions are:
Is this thing possible or is it just actors playing up to a camera? could it be done in Max MSP? what kind of other languages or software might be useful with making such a thing?

my default position is skepticism. The advert is of course very slick, and probably doesn't represent the reality. Download the app, if you want MORE adverts on your device and your personal data harvested. However, this does look technically feasible. The food tray might have simple embedded touch sensors, sending contact location data via Bluetooth (or LAN?) to ones device. The app does all the work.
Go to Amsterdam; steal a tray; hack it.
In Max, you could of course make a simple step sequencer, loop recorder and synths. But I prefer your 'print a Moog' idea - that would make a great project. All you need is an intermediary SW/HW platform to get touch data into Max.
