that´s very basic. touchosc should go far away if it really wants to take advantage of all the posibilities ipodtouch, iphone and ipad have.
I rather prefer the c74 app, which could be very powerfull with the propper developement. as it really brings a part of max to the control surface, allowing you to change layouts dinamically on the fly... although I like a lot the nice look of touchosc layouts.
let´s see what can do ipad within a year, right now I wouldn´t go over a stage with it...
Slate looks good, and there will be more... so many more. Just depends on what you need out of the OS---full-featured, or custom like the iPad OS? Pros and cons to both. A custom OS won't run the standard apps, but as its own apps catch up, the relative speed should be greater as it's streamlined for its own platform and not bloated like a full OS. And iPad will be multi-app soon enough, probably within a year.
I think both support up to 10 touches, and latency is very low.
An Android/Google "Slate" would be a nice contender, much more open, hopefully will run Processing sketches out of the box. That could be huge. And a Linux-based multi-touch tablet would be awesome too, would give Pure Data a fantastic venue to show its stuff (and give us Maxers a way to create cool apps on it, if we make the shift to PD).
i've heard that the German WePad was only resistive tactile surface, if it's true it's far less convinient for sliders and sound manipulations than the ipad would be...
This is to say that I really think that - beside the fact that Windows or Mac OS on a tablet running max would be the true dream - the multitouch quality, capacitive or resistive, the resolution of the touch sensors, latency, the number of fingers usable, are not just technical details on which you can say "oh, don't worry it'll be fine", but are really, for me, THE most important points of this technology. Max on a multitouch tablet, yes, but if it is a resistive tablet, it will NOT be as nice to play with as the ipad.

capacitive or resistive touch sensor ?
how many fingers ?
(... also: blob size tracking possibilities ?)
Come on, this is THE point of these new technologies, and it's like none of the dealers (Apple, HP,Wepad,etc...**) and none of the journalists, are able to tell a single word about this on theirs presentations.
** ok, except the exoPC web site finally say "Capacitive multi-touch", but how many fingers ? and how compares the sensor definition with an ipad ?
