New Mac Book Pro Setup?

Hi there, my old macbook pro 2011 crashed (3 days before a big show I had, obviously). It was responsible in visuals for my live performance, the sound being handled by one from 2016.
Time is now for buying a new one. I was a windows person until 2011, actually. But I won't go back for many reasons (OS constant tweaking, etc). I won't oppose both OS, just I need macOS. Some friends adviced me XPS Dell, or razerblade, but I have to confess I used some, as replacement for my 2011 mac book pro AND I had issues. Probably didn't take enough time with them but ... restoration points, many time, loading audinate Dante, ... crash etc. TOO MUCH time into not using them but tweaking. (I won't argue about that as I know I probably didn't spend enough time with them, but time fliesssssssss) The new 16" announced seems ok for me but I have to choose for my setup considering it will handle visuals and BIG number of polygons, or points in point cloud generation. Probably also 4K HAP video reading etc. I'm hesitating between some options, obviously, I'd like to have ALL MAXIMUM but I cannot afford it. I'd like to know if you could help me size the right one with me considering what I need to do (visuals) - Core i9 octa core first model (2,3GHz) seems to be "enough" - 32Gb seems required - AMD Radeon Pro 5500M with 8Gb (instead of 4) seems to be required too Should I promote more RAM but only 4Gb for the video card ? or the second processor Model and less ram for video ? I think: - Core i9 octa core first model (2,3GHz) - 32Gb - AMD Radeon Pro 5500M 8Gb is ok. But your precious experience is very important for me. Thanks a lot by advance.
