Im looking to create a form of chromatic tuner which I can set to a specific note and tune. It is being used as part of a project which looks at volume and projection of brass instruments verses intonation. What objects should I look at from converting mic input into frequency, then into specific chromatic notes? Any help would be appreciated.

I think the first step would be fft pitch detection, no?

Try fiddle~ or sigmund~ should pretty much do it for you ;)
