Take a look at Tutorial 44 (Flash Interactivity) in the Jitter tutorial. It covers the ground you're asking about, assuming you're familiar with getting the data from the Teleo stuff and how Max handles messages, routing, etc.

Also the flashserver should work for you. Takes some time to set up but then you're there, with all kinds of added possibilities for interactivity.

Many joysticks can be controlled / read in Max via the hi object too.
