If a user can stop "playback" at any time, what patching method can be used to prevent a signal from jumping to zero (clicks) when a toggle is switched off.

Using line~ to add an attack to the start of a signal is successful in removing clicks at the start of a signal, but not upon stopping playback clicks can occur.

Is there some fade a signal out before it stops (slew it down to zero at a specified time) even if playback is stopped?

You don't really need a gate~ object. Just fade the sound in/out quickly.
